Gastronomy in Barcelona
The course is structured around two main axes or objectives. On the one hand, we will always keep in mind the concepts of tradition and innovation, since, in many areas of current Catalan gastronomy, the brand is created from finding the balance between the two or taking a clear option for one or on the other. On the other hand, we offer some reflections on the relation of gastronomy with three concepts: history, territory and identity. Both this reflection and the approach to the concepts of tradition and innovation will be based on the Catalan gastronomic reality with some references to the Spanish context.
In order to achieve these objectives, the course will consist of sessions carried out by specialists in each of the subjects, with practically all of them a combination of theory, demonstration and, in some cases, tasting. Whenever possible, the sessions will be held at the workshops, hospitality schools and / or training classes of specialists who will show us their work in their surroundings.
